Nose: Fresh ashy smoke, oysters with lemon and salt, capsicum, seaweed flakes, sourdough, white pepper, smoked cream soda, green banana, wild fennel, and heather

Palate: Green peppers, fennel, and seaweed, then creamy sweetness with sooty white pepper, smoky undertones, oily saltiness, soy sauce, and lime over shellfish

Finish: Wasabi heat with anise, salted limes, smoked vanilla, sourdough, green peppers, and sooty poached pears
