Similarly to the 17yo, the 21yo is matured in a combination of second fill ex-bourbon casks and first fill ex-Oloroso sherry, Spanish oak casks. The 21yo, however, has a higher proportion of ex-sherry casks, imparting greater depth and complexity. Non-chillfiltered and bottled at 46%.
Nose:Full bodied with traces of fruits (apples and pears); slightly fragrant with spicy overtones.
Palate:Creamy, toffee, vanilla, baked red apple with a hint of smokiness.
