Waterford Heritage: Hunter 1.1 is a remarkable limited-edition Irish single malt from Waterford Distillery's acclaimed Arcadian Series. This pioneering release revives the historic Hunter barley variety, developed by Dr. Herbert Hunter in 1959 and once celebrated for its exceptional flavour before disappearing from Irish agriculture in the 1970s. Using just a surviving 50-gram seed sample, Waterford painstakingly propagated the grain over several years to produce this unique whiskey. Distilled in 2019 and bottled in 2022 at 50% ABV, it matured in a carefully balanced combination of first-fill American oak, virgin American oak, premium French oak and Vin Doux Naturel casks. Limited to approximately 9,000 bottles worldwide, Heritage Hunter 1.1 is a fascinating collector's piece that showcases both heritage barley and Waterford's uncompromising terroir-driven philosophy. 700ml

Tasting Notes

Nose: Sun-dried hay, red apple, lemon sherbet, fresh barley, pencil shavings, earthy minerality, oak spice and floral herbs.

Palate: Rich shortbread, orange oil, orchard fruits, porridge, honey, cloves, dusty malt, vanilla and gentle oak spice with impressive texture.

Finish: Long and dry with green oak, citrus peel, soft char, warming spice and lingering cereal sweetness.
