Waterford Organic Gaia 2.1 is part of the Arcadian Series, celebrating maverick growers who prioritise flavour over yield and honour the old ways. Distilled from the 2016 organic Irish barley harvest, this expression is named after Gaia, the neopagan goddess and embodiment of Mother Earth. Bursting with vibrant complexity, it delivers a sensory journey from citrus and floral aromas to a layered palate of spice, fruit, and cocoa. Bottled at 50% ABV.

Nose: Orange peel, fresh soil, bread crust, brown sugar, milk chocolate, fruit salad, fig rolls, lavender, sweet marshmallow, buttermilk
